Hotscotch Country Loaf

Our take on a classic country sourdough, made with organic heritage flour and freshly milled Hotscotch Landrace wheat from Burrum Biodynamics.

Hotscotch Landrace is a unique heritage wheat blend grown biodynamically by Burrum Biodynamics, developed from traditional grain lines and named in honour of local grain-growing history. This wheat comes from traditional wheat populations that have been grown and naturally adapted to their local environment over generations, rather than being bred as a single modern variety. We freshly mill the Hotscotch wheat in our bakery to capture its full flavour, aroma and goodness, then naturally ferment it into a beautifully tender, wheaty loaf with a golden crust.
